Never crated or tethered, Strauss veal calves are group raised and allowed to forage in addition to feeding on formula. Their family farm partners are endorsed by animal welfare groups and the American Veal Association for veal that is not only delicious, but something you can feel good about. Strauss veal has a mild flavor which is perfect for showcasing culinary sauces.  In addition to the cuts of meat, Forum carries Strauss veal bones and sauces.

Strauss also offers domestic (American) lamb, grass-fed and grain-finished for chefs who prefer a mild, buttery, almost beef-like taste. Raised in the Midwest by hand-selected family farmers and ranchers, proper meat-breed genetics combine with high quality grain finishing for a richly marbled, delicately flavored lamb. All Strauss lambs are USDA Choice grade.

Strauss New Zealand and Australian lamb is 100% raised on pastures by farmers who are expert stewards of their land. As nature intended, this stress-free environment creates exceptionally succulent, tender lamb with a more traditional, yet lean and mild-tasting meat.  New Zealand and Australian lambs are smaller than domestic lamb, resulting in smaller lamb cuts which can be of culinary benefit. New Zealand lamb is exceptionally nutritious with vitamins, minerals and essential fatty acids.
